This month's recipe is a delicious and hearty Baked Ziti with a creamy cashew sauce that will leave your taste buds dancing. Perfect for a cozy family dinner or a special gathering, this dish combines the rich flavors of Impossible Ground, fire-roasted tomatoes, and a luscious cashew-based sauce. Baked Ziti with Creamy Cashew Sauce
Ingredients:
For the Creamy Sauce:
- 1 cup raw cashews
- 1 cup water
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Pinch of salt
- 6 tablespoons aquafaba
For the Baked Ziti:
- 12 ounces penne pasta
- Olive oil
- 1 pound Impossible Ground
- 1/2 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1.5 jars (36 ounces) tomato basil marinara sauce
- 14.5 ounces can fire-roasted diced tomatoes
Instructions:
- Prepare the Cashews: Place the raw cashews in a bowl and cover them with boiling water. Let them sit for 30 minutes. While the cashews are soaking, you can prepare the pasta and tomato-meat sauce.
- Cook the Pasta: Preheat the oven to 350°F. Cook the pasta according to package instructions until al dente.
- Prepare the Tomato-Meat Sauce: In a large skillet, add 1 tablespoon of olive oil and sauté the onions. Add the Impossible Ground, breaking it up into small pieces until browned and cooked. Add the garlic, Italian seasoning, red pepper flakes, marinara sauce, and diced tomatoes. Cook until heated through for another 5 minutes. Remove from heat and set aside.
- Make the Creamy Cashew Sauce: Drain the cashews and place them in a high-speed blender. Add 1 cup of fresh water, olive oil, lemon juice, and salt. Blend until completely smooth. Add the aquafaba and blend until smooth. The sauce will look very liquidy and runny but will set up in the oven.
- Assemble the Baked Ziti: Add a scoop of the tomato-meat sauce to the bottom of a 9x13 pan and spread it out evenly. Mix the pasta with 1/3 of the remaining tomato-meat sauce. Pour half of the pasta into the pan. Drizzle over half of the cashew sauce followed by another 1/3 of the sauce mixture. Add the remaining pasta followed by the rest of the cashew sauce and tomato-meat sauce.
- Bake: Bake for 25-30 minutes until golden and bubbly. Let sit for 10 minutes before serving. Enjoy!
